UW-Madison’s Candy School shows the scientific way to make a marshmallow.

Voiceover: In UW-Madison’s confectionery science class, students spend every Tuesday making sweet treats and delicious candies. Recently, the students made marshmallows—and it got a little messy. Here’s how they did it!
Start by mixing gelatin and hot water to create a gelatin solution, while also mixing corn syrup, sugar and water together and heating that sugary mixture to 227 degrees.
Next, cool the sugar mixture down to 212 degrees, then mix the gelatin solution and the sugar solution together in a mixer.
Now here’s the fun part—pick out a flavoring and a color for your marshmallow.
Anything’s possible! Add the flavor and color to your mixture, and start up the mixing machine. Then, let it mix away.
Begin the mixer at medium, then move to a higher speed as the marshmallow aerates and becomes fluffier.
Once it’s starting to look like marshmallow fluff, stop the mixer, and fill an icing bag with your sugary treat.
Then, pipe the marshmallow fluff out onto a starch tray… the best you can, at least.
And there you go—after only a few ingredients, a little bit of time and most likely a big mess, you’ve created a batch of delicious marshmallows.
